- Spinach (palak) – 5 bunches (approx.), finely chopped
- Milk – ½ litre
- Maida – 3–4 tsp
- Cornflour – 2 tbsp
- Water – 200 ml (for boiling spinach)
- Sugar – 2–3 tsp
- Salt – to taste
- Grated cheese – as required
Procedure
- Finely chop the spinach and boil it in 200ml of water with a little salt.
- Add some grated cheese to the spinach and let it boil for a few minutes.
- In a separate bowl, mix milk, maida, cornflour and sugar until smooth with no lumps. Taste to check sugar & salt
- Add this mixture to the spinach and cook for some time, stirring continuously until it thickens slightly.
- Transfer the mixture to a microwave-safe baking dish.
- Sprinkle grated cheese on top.
- Bake or microwave for a few minutes until the cheese melts and turns slightly golden.
